Yema Cupcake Recipe

Ingredients

  • Cupcake:
  • ½ cup butter, melted
  • 8 oz cream cheese, room temperature
  • ⅔ cup evaporated milk (fresh milk is fine)
  • ½ cup all purpose flour
  • 3 tablespoons cornstarch
  • ¼ tsp salt
  • 6 eggs, whites and yolks separated
  • 1 tsp lemon juice
  • ¼ tsp cream of tartar
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • Yema frosting:
  • 1 can condensed milk (14oz)
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • ⅓ cup water
  • ½ tbsp cornstarch
  • 1 cup grated cheese

Instructions

  1. In a large mixing bowl, beat the cream cheese. Add the melted butter and milk and mix thoroughly until smooth.
  2. Add the flour, cornstarch and salt. Continue mixing until all ingredients are incorporated. Add in the egg yolks then the lemon juice. Set aside.
  3. In a separate bowl, mix the egg whites and cream of tartar. Beat until soft peaks form. Add the vanilla and gradually sugar until stiff peaks starts to form.
  4. Fold in the egg whites to the cream cheese mixture until well combined.
  5. Preheat oven to 325 degrees F. In order to prevent the cupcakes from drying, we need to “steam bake”. Prepare a large pan with hot water. You need to place your cupcake pan inside the container and bake it. If you don’t have a large pan, you can just use the biggest one you have and place it on the very top layer of the oven.
  6. Spoon batter into paper-lined cupcake pan, filling each cup ¾ full.
  7. Bake for 25-30 minutes or until toothpick inserted into the middle comes out clean.
  8. Now, to make the yema frosting, pour the condensed milk in a medium pot.
  9. Mix together water and cornstarch then pour into the pot with condensed milk.
  10. Add the egg yolks and cook in low-medium heat. Once it starts to boil, add the vanilla. Keep stirring and cook until texture becomes thick and spreadable, about 35-40 minutes. Turn off heat and add the butter. Let cool.
  11. Spread the yema frosting over the cupcakes and sprinkle with some shredded cheese. You can use either cheddar or american cheese…they are both good.
  12. Serve and enjoy your yema cupcakes! Great for snack or dessert
