Already feeling the summer heat? Cool down with this refreshing dessert called mais con yelo! If you want to eat something different this summer other than halo-halo, follow this quick mais con yelo recipe.

Mais con yelo is a Spanish term, which literally translates to corn with ice. Corn is typically used for savory dishes, but in this Pinoy recipe, corn is served as a dessert. You can buy corn in marketplaces and grocery stores, and they are available fresh or in cans. Corn is actually a decent source of protein, and is important for eye health and prevention of diverticular disease. Corn is also a rich source of vitamins and minerals vital in the development and protection of your body.

This mais con yelo recipe is perfect for people who do not have much free time in their hands, and want to whip up a simple dessert at home. For those in a hurry, canned corn is available in supermarkets, as well, but if you want to use fresh corn for your mais con yelo, the corn must be cooked until tender before removing the kernels from the cob. You can add evaporated or condensed milk, or use creamed corn to make your mais con yelo creamier. If you have a sweet tooth, you can add sugar to adjust the sweetness.

To add more twist to your mais con yelo, you can top it with ice cream for that extra sweetness and refreshing feeling, or add crushed corn flakes for more crunch. Mais con yelo is a simple sweet treat to reward yourself after a long day.

Ingredients
  • 1-2 cups shaved ice
  • 1tbsp sugar or any sweetener that you prefer.
  • 1 tbsp corn cereal for toppings (optional)
  • ½ cup cream corn, you may use whole kernel corn if you prefer
  • ½ cup condensed or evaporated milk
Instructions
  1. Put creamed corn into a halo halo / parfait glass.
  2. Top glass with shaved ice.
  3. Pour milk over ice.
  4. Top with corn flakes.
  5. Stir well and add sweetener until desired sweetness is reached.
