Puto is the Filipino term for steamed rice cake. This kakanin is traditionally made from slightly fermented rice dough or galapong. Fermentation is done by soaking the rice overnight. The soaked rice is ground the next day and then steamed. This traditional puto is also called putong puti or puting bigas to distinguish it from other dishes that are also named puto. Rice-based puto include puto bumbong, puto kutsinta, puto maya, and puto pao among others.
Puto is commonly eaten as is or as an accompaniment to savory dishes, including dinuguan. Puto and dinuguan is the most famous combination. But it is also eaten with pancit during birthday celebrations.
With development comes different puto varieties, including those not using rice. Instead, flour is used as a substitute just like in our recipe. Other non-traditional ingredients, such as chocolate, ube or purple yam, and vanilla, are also now being utilized. This recipe here also uses cheese, which is a common addition to this kakanin. A dash of food color can also be added for extra fun, especially if it will be served to kids. You can also put as much cheese as you want! It is your recipe so you can adjust it according to your preference.
