How to Cook Tortang Talong/ Eggplant fritata

Ingredients:

  • 5 eggplants
  • 6 eggs
  • 3 cloves garlic
  • 1 onion
  • 3 tomatoes
  • Oil
  • Salt and pepper

Procedures:

  1. Wash and prepare all the ingredients.
  2. Chopped the tomato, onion and garlic.
  3. Beat the egg with salt and pepper. And set aside
  4. Grilled the eggplant and let it cool and peeled.
  5. Sauté the onion, tomato and garlic mixture until cooked.
  6. Heat the pan with oil.
  7. Mashed the eggplant with egg mixture and put in heated pan with oil and top with onion tomato mixture.
  8. Flip it after a minute and wait to cooked. Serve with rice and enjoy!
